It's been a few weeks since I last posted. Been a little busy with new job and adjusting with the schedule. Today, I am sharing this cheese beer bread recipe. This was inspired by cheese beer soup. Maybe you could serve this with cheese beer soup? Overkill? The saltiness of the cheese offsets the slight sweetness of the beer which makes this recipe great.
Japchae is stir-fry Korean glass noodles. It's as easy as Chinese stir-fry noodles but uses different noodles and slightly sweet. I like eating noodles and the good thing about this is it's versatile. You can add or remove some vegetables or make it vegetarian or non-vegetarian.
I've had taro stew before with chicken but this is equally good with juicy pork short ribs that just fall off the bone goodness. This is widely available in Chinese restaurants usually with different vegetables and sometimes with tofu. Nonetheless, homemade is always better and you get to choose what you put in.
This is not a bread made from scratch but this is surely a delicious bread. I'm not really a fan of baking bread from scratch as it takes forever. This time, I just got a bread and filled it with garlic, pesto, ham, cheese, and butter.
After trying Ikea's salmon spread, I had wanted to try making my own version. It's mostly because I don't want to go to Ikea just to get a salmon spread.
Quinoa was not popular until a few years ago. This super grain is actually a seed. It's rich in protein, fiber, magnesium, iron, and more. Quinoa could easily substitute rice and it's cooked the same way as rice. Despite being a superfood, it's still not commonly used by people. I honestly don't use them as much but I'm trying to incorporate it more in my diet as rice substitute. I think the squash's sweet flavor complements the nutty quinoa. The soft texture of the squash contrasts well with the firm texture of the quinoa.
I'm not very patient when it comes to preparing meals that would need hours to cook but when it comes to braised meat, it surely is something worth waiting for. Just like baking. These short ribs are fall off the bone goodness. I like how tender the meat is, just perfect with the sweet sauce.
This lemon chicken recipe has a very light crispy batter. The batter keeps the chicken moist. I first tried this in a Chinese restaurant and have been craving for it for a few weeks already. I was looking for some recipes online and their mostly baked lemon chicken. I wanted the thick lemon sauce on crispy fried chicken fingers so I had to somehow recreate it myself.
I like eating chocolate chip cookies but they are obviously loaded with lots of rich ingredients so I just usually make my own. I reduced the sugar for this recipe. My friend would usually tell me that reducing the sugar would affect the texture of the cookie which I found out to be true.

I also used 70% chocolate chips to cut down on sugar but feel free to use semi-sweet chocolate chips as they are more palatable. I also used vegan butter here to make it a little on the healthier side.

Sans rival is a cake from the Philippines which means without rival in French (according to Wikipedia). It's composed of layers of meringue and buttercream. My mom would usually get this from a popular bakeshop chain when I was a kid. I never really knew nor cared about what's in it but it was good. I found out later that it had cashews. In my defense, it's usually powdered so it's hard to tell.
When I came up with this recipe, I was thinking of making a Filipino dessert so that they could try something different. I wanted to make a mango float but it's difficult to make a mango float when it's so hard to find mangoes that are as sweet as the mangoes in the Philippines. I then decided to make tiramisu instead but still having the mango float in mind I thought, "Why not create a mango float tiramisu instead?" That just lit up a bulb in my head. I searched for spices that go well with mangoes. I found that ginger goes well with mangoes and sure it did!
Tofu cheesecake? Yes, it's real! It instantly became one of my favorite cheesecakes the moment I've tried it. Since it's not very easy to find, I'm recreating it. The tofu lends some texture to the cheesecake as no-bake cheesecakes sometimes end up like a panna cotta. It also gives the cheesecake another layer of flavor.
