Cheesy Cassava/Yuca Cake

Cassava cake is very delicious. It's sweet and salty. It's also rich and creamy. Cassava cake is very common in the Philippines. It's usually eaten as snack or dessert. Cassava, is the term we use to call it growing up and it's not until just recently that I hear it being called yuca. That's another word to add to my dictionary.

This is very easy to make and perfect to feed a group of relatives or friends coming over. It's almost impossible to get this wrong unlike when making a cake. I say "almost" because there's always the chance of burning it like any other dish if you're not careful. A little peeling here and grating there, whisking here and mixing there, and you're ready to bake! That's how simple this recipe is.

The gooey melted cheese on top and the creamy custardy cake is just melt-in-your-mouth goodness. This cake is a little heavy so make sure to save some space. And no, I wasn't going to tell you to just eat a little.

Ingredients
  • 3 cups (about 400g) grated cassava/yucca
  • ½ cup evaporated milk
  • 1 cup coconut milk
  • ¾ cup condensed milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 cup grated cheddar cheese
Instructions
  1. Preheat oven to 350ºF.
  2. Whisk together evaporated milk, coconut milk, condensed milk, eggs, vanilla extract, and salt in a bowl. Stir in the grated cassava.
  3. Transfer the mixture to an 8" x 8" square pan. Bake for 1 hour.
  4. Once done, broil for 3 to 5 minutes until the cheese browns.
  5. Let the cassava cake cool until it fully sets. Serve warm.
