Cranberry & White Chocolate Scones

It's the Christmas season! People who don't use their ovens as much are probably already dusting off the dirt and getting ready to bake. I was just baking the whole day yesterday preparing treats for family and friends. One of the treats I made was this cranberry and white chocolate scones.

Start by mixing the all-purpose flour, baking powder, sugar, and salt on low speed just enough to get everything incorporated. You can use a food processor or just do it by hand if you don't have a mixer. Add in the butter and mix for a few seconds until it starts to resemble coarse crumbs.

Whisk together the milk and egg. Turn the mixer on low speed then slowly pour in the milk mixture. The dough should come together quickly. Sometimes, the dough may be a little sticky due to the butter softening. Stir in the cranberries and white chocolate chips. Feel free to add extra cranberries and white chocolate chips if you like.

Flour your work surface then place the dough on top. Flour the dough then using a rolling pin, flatten the dough to over 1 inch then use a round cutter to cut.

Transfer the scones to a baking sheet. They're ready for baking! Bake at 400ºF for around 20 to 25 minutes depending on size and until golden brown.

  • 3 cups all-purpose flour
  • ¼ cup sugar
  • 2 tbsp baking powder
  • ¼ tsp salt
  • ¾ cup (1 ½ sticks) unsalted butter, cold and cut into small cubes
  • 1 large egg
  • 1 cup milk
  • ½ cup white chocolate chips
  • ½ cup dried cranberries
Instructions
  1. Preheat oven to 400ºF.
  2. Place flour, sugar, baking powder, and salt in mixer on low then add in the butter. Mix until it resembles coarse crumbs.
  3. Beat the egg and milk together. Slowly pour in the milk mixture into the bowl and mix until dough comes together.
  4. Stir in cranberries and white chocolate chips then transfer dough to a floured work surface. Flour the dough then roll the dough to about over an inch thick. Use a round cutter to cut the dough.
  5. Transfer the scones to a baking sheet then bake for 20 to 25 minutes or until they become golden brown.
