Cheesy Jalapeño Dynamite Poppers

Dynamite is a classic Filipino dish. It is filled with ground pork and deep-fried in spring roll wrappers. Since jalapeño poppers are just good, I decided to make a cross-over of the two dishes. It's not one of the healthiest dishes around so I recreated my pan-fried version. Although, I must say that cheese is not as healthy so I used good quality ones with less fat. I never deep-fry anything. Seeing the food float in oil is such a nightmare. I just couldn't get myself to do it. The irony is that I do eat them occasionally when I get them from restaurants.

Cut the jalapeños in the middle lengthwise to create an opening then crosswise on top. Just cut halfway so that the jalapeños stay in one piece.

Combine the cheeses and season with a little salt and pepper.

Fill the jalapeños with the cheese mixture.

I cooked my jalapeño poppers for just around 5 minutes. If you want your jalapeños to be very tender, you may need to cook it a little longer but be careful because the cheese would start to ooze out and it would turn black quickly.

Ingredients
  • 10 jalapeños
  • ½ cup cream cheese
  • ¼ cup grated mozarella cheese
  • ¼ cup grated sharp cheddar cheese
  • salt and pepper
  • 10 sheets spring roll wrapper
  • olive oil
  • salsa for dipping
Instructions
  1. Combine the cheeses and lightly season.
  2. Create an opening by cutting one side of the jalapeños lengthwise and on top.
  3. Remove the seeds or leave some of it for added heat.
  4. Stuff the jalapeños with the cheese mixture then wrap in spring roll wrappers.
  5. Pan-fry the jalapeños for 6 to 8 minutes turning it around occasionally to get all sides to brown. Alternatively, coat the jalapeño poppers in olive oil and bake for 15 minutes in 325ºF oven.
  6. Serve with salsa.
