Since it's only usually available in expensive restaurants, I wanted to try making it myself. I must say, it turned out beautifully. Serve it with some greens and it's the perfect meal.
This simple and easy recipe doesn't need any skill or techniques. You don't even need to cut anything but you need to peel a clove of garlic. The only important thing is a thermometer to test check the meat's temperature.

Ingredients
- 500 g lamb rack
- 1 clove garlic
- 1 sprig rosemary, stem removed
- 4 sprigs thyme, stem removed
- 3 mint leaves
- 1 tbsp extra virgin olive oil
- salt and pepper
Instructions
- Preheat oven to 450ºF.
- Place garlic, rosemary, thyme, mint, and olive oil in food processor and process until everything blends together.
- Spread the herb mixture all over the lamb rack then season with salt and pepper.
- Bake for 12 to 18 minutes depending on desired doneness. Bake until thickest part reads 145ºF on thermometer for medium rare.
- (Optional) For added crunch, sear lamb rack in a pan for a few minutes until golden brown.
- Serve and enjoy!
